Grand Marnier Mousse

Ingredients:

  • 300g white chocolate
  • 3 sheets gelatin
  • 4 egg yolks
  • 75 ml Grand mariner
  • 1000 g whipped cream

Cooking Method:

  • Melt chocolate in the microwave using 30 second intervals, stirring the chocolate each time
  • Bloom gelatin in cold water
  • In a sauce pan simmer the Grand Marnier over low heat, do not let it come to a boil
  • Over a double boiler, whisk egg yolks until they double in volume
  • Remove egg yolks from heat and add in the melted chocolate
  • Remove gelatin from cold water and squeeze out any remaining liquid
  • Add the gelatin to the Grand Mariner and mix until dissolved
  • Add the Gelatin mixture to the egg yolks, whisking to incorporate and prevent lumps
  • Fold in the whipped cream
  • Pour into desired container or dessert glasses
  • Cover, date and refrigerate until set
