Apple Cole Slaw

Ingredients:

  • 3 C Distilled White Vinegar
  • 3 C Granulated Sugar
  • ¾ C Kosher Salt
  • 2 t White Pepper
  • 3 C Apple Juice
  • 2 C Water
  • 2 QT Julianne Carrots
  • 1 ½ C apple slices
  • 8 QT Julianne Green Cabbage
  • 4 C Mayo

Substitute the Apple for Pear, quince or any other similar fruit. This is all about bringing cole slaw up a level.

Cooking Method:

  • Combine and bring to a boil, Vinegar, Sugar, Salt, Pepper, Apple juice and water
  • Pour the Boiling mixture over the carrot, apples, and cabbage
  • Let the mixture sit for 30 minutes
  • Strain and reserve one cup of liquid
  • Return that one cup of liquid back to the vegetables
  • Add the mayo

Yields: 1 ¼ Gallons
