Ingredients:
- 300g white chocolate
- 3 sheets gelatin
- 4 egg yolks
- 75 ml Grand mariner
- 1000 g whipped cream
Cooking Method:
- Melt chocolate in the microwave using 30 second intervals, stirring the chocolate each time
- Bloom gelatin in cold water
- In a sauce pan simmer the Grand Marnier over low heat, do not let it come to a boil
- Over a double boiler, whisk egg yolks until they double in volume
- Remove egg yolks from heat and add in the melted chocolate
- Remove gelatin from cold water and squeeze out any remaining liquid
- Add the gelatin to the Grand Mariner and mix until dissolved
- Add the Gelatin mixture to the egg yolks, whisking to incorporate and prevent lumps
- Fold in the whipped cream
- Pour into desired container or dessert glasses
- Cover, date and refrigerate until set
